Mix 3/4 cup flour, 1/4 cup sugar,1/2 teaspoons baking powder and 3/4 teaspoon salt. Make a well in the center and set aside. Combine 1 beaten egg,3/4 cup milk and 1/3 cup oil. Stir just till moistened; batter should be lumpy.Grease muffin cups ; fill 2/3 full.Bake at 400 F for 20 to 25 minutes.
Blueberry: Prepare Basic Muffins as above, except combine 3/4 cup fresh or frozen blueberries, thawed, and 2 tablespoons additional sugar. Carefully fold into batter.
