Oats kanji

Grate 1/2 cup coconut with 1 garlic, 1 tsp jeera powder, 1 tsp turmeric powder, 2-3 shallots and 1 green chilli. Boil 2 cup water and add 1 cup powdered oats. Add the coconut mixture to this and cook well. Add salt as desired.

Tomato and broccoli soup

Heat 1 tsp butter and sauté 1/2 sliced onions. Now add 1 garlic,salt as desired, 1 tsp grated ginger, 1/2 tsp black pepper powder, one and a half tomatoes (sliced) and 1/c cup broccoli. Add chicken stock and 1/4 cup grated cheese (optional). Close and cook well. Wafter that let it cool and blend it in magic bullet or mixer. Cook again and add corn flour (mix 1 tsp in 1/4 cup water) to thicken it. Add 1 tsp sugar and 1/2 cup skim milk and boil again until soup is thick. Serve hot.

Magic bullet broccoli,lentil and chicken soup

Heat 1 table spoon butter and sauté 1/4 onion. Add 1 cup water. Let it boil. Blend 1 cup boiled broccoli, 1/2 cup cooked chicken, 1 cup cooked green gram , 1 tsp salt and 1 cup milk. Add this to the stock and cook well until done.Add 1 table spoon corn flour mixed with water to thicken the soup. Serve hot.

Vegetable oats soup

Boil 8 cups of water/chicken stock and add 1 cup rolled oats, 1 red pepper, 1 carrot, 1 tomato, 1/4 onion, 1 sweet corn, 2 cups broccoli, 1 table spoon butter, 1/2 cup grated cheese, 1 garlic and 1 table spoon salt. When the vegetables are cooked blend. Add lemon juice before serving. Serve hot.

Chicken Porridge Soup

Recipe:

1-2 pieces of chicken, uncooked (I prefer dark meat for my soups, like thigh or drumstick...gives sooo much more flavour)
6 cups of water
a few spaghetti sticks, I used about 20 sticks
4 heaped tbsp quick oats
2 heaped tbsp of any good quality cream of vegetable powder like Knorr (the ones that come in a satchet)
a few peppercorns (5-6)
1 tsp garlic paste
salt to taste
juice of half a lemon (more if you like your soups more lemony)
I also used a bit of powdered pepper and 1 green chilli, chopped for added spice

Put your chicken into a pan, add the water, quick oats, salt, peppercorns and garlic paste. break the spaghetti sticks to about 3 inch pieces and add them in. Simmer this gently over low heat, giving the chicken time to cook and the oats to thicken.

Half-way through the cooking (about 8 mins) mix the Knorr cream of veg with a bit of water and add it in, stirring to combine.

Once the chicken feels done, remove it, let it cool slightly and then shred the meat off the bones. Discard the bones and put the chicken meat back into the pot. Add your green chillis if you're using them and continue simmering for about 10 more minutes.

Cucmber salad

Peel and slice a cucumber into small pieces.Mix this with 4 tsp grated coconut and salt.Seasoning: Use oil, 1/2 tsp mustard, 1/2 tsp urad dal and a pinch of asafotida.Mix this and chopped coriander leaves with the salad.
