Beetroot cake (Ancy's Baking 'n' Cooking Delights)

Ingredients •Milk chocolate, -100gm (chopped) •Butter - 1 cup (softened) •Brown sugar - 1-1/2 cups • Eggs - 3 •Pureed beetroot * -2 cups •vanilla extract - 1 teaspoon •all-purpose flour - 2 cups •baking soda - 2 teaspoons •salt - 1/4 teaspoon *cook the beetroot and then blend it till puree Directions •In a microwave, melt chocolate and 1/4 cup butter; stir until smooth. Cool slightly. Meanwhile, in a large bowl, cream the remaining butter and brown sugar until light and fluffy. Beat in eggs. •now add beetroot puree, vanilla and chocolate mixture and beat into creamed mixture. •Sift flour, baking soda and salt;add gradually to the creamed mixture. •Pour into a greased and floured 10 inch square tin. Bake at 180 for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely. Chocolate glaze Cream-150gm Chocolate-150gm Honey-2tsp Bring heavy cream and honey to a gentle simmer in a small saucepan. Pour over chocolate in a bowl, and let stand for 1 minute. Stir until chocolate melts and mixture is shiny and smooth. Let cool slightly, about 10 minutes. Use immediately.
